Rondélio do Poty: Cantina do Délio’s 2026 Boa Lembrança dish

Two metres of fresh pasta, ricotta and spinach, two sauces and a tribute to Poty Lazzarotto, served with a painted plate you take home.

Some stories fit on a plate. The Rondélio do Poty, Cantina do Délio’s 2026 Boa Lembrança dish, brings together in a single recipe the technique of fresh pasta, the warmth of home cooking and a piece of Curitiba’s history.

It’s the latest chapter of a tradition the Cantina has been building for years within the Boa Lembrança Restaurant Association: every year, an exclusive dish, served with a hand-painted plate the guest takes home.

O dish

The name gives away the joke. The rondeli, the filled and rolled pasta of Italian cooking, becomes “Rondélio”: a nod to Poty Lazzarotto and, while we’re at it, to Délio Canabrava himself, the house’s founder.

It all starts with about two metres of fresh pasta, rolled out by hand and filled with creamy ricotta and sautéed spinach. The strip is rolled up, cut into generous portions and baked under two sauces: fresh tomato on one side, rich béchamel on the other. Both halves gratinate together on the same plate, for those who don’t want to choose between acidity and creaminess.

It’s a dish to share, talk about and photograph before cutting. And, as in any good cantina, generous enough to remind you that abundance is part of the affection here.

Why Poty?

Napoleon Potyguara Lazzarotto, known as Poty, was born in Curitiba in 1924 and died there in 1998. A draughtsman, engraver and illustrator of authors such as Guimarães Rosa and José de Alencar, he lived between Curitiba, Rio de Janeiro and Paris. But it was in his home city that his work became part of the landscape: public murals and panels that anyone from Curitiba recognises, even without knowing the artist’s name.

The Cantina, which has occupied the same wooden house in Alto da XV since 2007, sees itself as part of Curitiba’s beloved landscape. And it found in Poty a way to say so without speeches: with a pun and a well-made dish. The illustration on the 2026 plate is also inspired by his work.

The food ends on the plate. The memory doesn’t.

The Boa Lembrança tradition

The Boa Lembrança Restaurant Association was founded in 1994 in Petrópolis (Rio de Janeiro), inspired by Italy’s Unione Ristoranti del Buon Ricordo from the 1960s. Every year, each member restaurant creates an exclusive dish served with a plate painted especially for it.

Guests enjoy the experience at the table and leave with a piece to display, collect and compare with those from other years and other restaurants. Some people build real collections, a kind of diary of the restaurants they’ve visited.

Italy and Curitiba on the same plate

Before opening the house, Délio spent a month travelling through cantinas from northern to southern Italy. That care for fresh pasta shows to this day, including in the two-metre ribbon that becomes the Rondélio. Italy is in the technique, the rondelli, the béchamel and the tomato sauce. Curitiba is in the name and the tribute. And the memory stays in two places: at the table, with the hot gratinated dish, and on the shelf at home, with the plate.
