Ospitalità Italiana and FIC: the certifications behind Cantina do Délio’s Italian cooking
The Italian government’s Ospitalità Italiana seal and the Federazione Italiana Cuochi certification recognise the authenticity of the house’s cooking.

From the house archive, originally published in 2018 and updated in October 2026.
Being an Italian cantina takes more than a menu. At Cantina do Délio, authenticity is certified by those who know: the Italian Chamber of Commerce and the Federazione Italiana Cuochi.
Marchio Ospitalità Italiana
The Ospitalità Italiana seal is awarded by the Italian Chamber of Commerce together with Isnart, Italy’s National Institute for Tourism Research. The Cantina first received it in 2011, and it is renewed every year.
Having an Italian restaurant isn’t enough to earn it. You must meet a list of requirements from the Italian government’s certification body. Among them:
- Languageat least one staff member fluent in Italian
- Settingdecor that evokes Italy
- Kitchena chef trained in Italian cooking or experienced in traditional restaurants
- Menuat least half the dishes traditionally Italian
- Winesat least 20% of the wine list of proven Italian origin
- Ingredientsphotographed and assessed by a committee of critics and oenologists
We take care never to lose our roots, always seeking genuine ingredients and making every dish with love and respect for our guests.
Délio Canabrava
Before opening the house, Délio spent a season in Italy researching the products, flavours and hospitality of each region. For him, that’s what makes the difference.
Federazione Italiana Cuochi
In 2018, Délio and chefs Rafael Gonçalves and Milton Ribeiro, who ran the kitchen at the time, were certified by FIC Brasile, the Brazilian delegation of the Federazione Italiana Cuochi. The organisation promotes the foundations of traditional Italian cooking and recognises the great names of gastronomy in Brazil.

To celebrate, the kitchen created a menu more Italian than ever, with classics like Spaghetti alla Norma: crispy eggplant, pomodoro sauce, ricotta, fresh tomato and lemon.

The relationship with the federation continued. In 2023, Délio received the FIC’s Chef Patron Commendation, the first Brazilian to be honoured, for his work training new Italian-cuisine professionals.
